My grandmother, Lourdes Georges, was a Chef and growing up she used to make the best Haitian food. One of my favorite dishes from her was the Haitian Pate´. A Pate´ is a baked puff pastry-type pastry filled with savory fillings. You can make this with ground beef, cod fish, or even veggies.
Haitian Pate´ was a staple in my childhood. Growing up, every party you went to, and every Haitian bakery you shopped at, sold these pate´s.
Although my grandma would spend hours and hours making her pate from scratch, yes even the dough, this recipe will use a simpler version when it comes to making these pate´s.
For this recipe I will be using Cod Fish.

Ingredients
- Pepperidge Farm Frozen Puff Pastry Sheets
- Cod Fish
- Thyme
- Onions
- Scotch Bonnet Pepper
- Parsley
- Garlic
- Salt
- Pepper
- Haitian Epis
Egg wash
- 1 egg
- 1-2 tablespoons of water
Instructions
- Take out your pastry sheet from the freezer and ensure this has thawed for at least 20 minutes prior to baking.
- Cod fish is extremely salty so you want to make sure you get rid of all of that saltiness prior to stuffing your pastry. I would recommend to boil the cod fish at least 3 times for 20 mins, each time changing the water.
- Taste the cod fish once you have finished boiling it to ensure you have gotten rid of all the saltiness.
- Chop up the thyme, parsley, onions, and garlic and toss this into a pan with olive oil. Once this has a nice color to them, add in your cod fish and cook for 5 minutes.
- Take your thawed pastry sheets and cut each sheet into 2-3 pieces depending on the size you want your pate´s.
- Add a small spoon of your cod fish mixture to the puff pastry.
- Fold the pastry sheet and use the egg wash and pastry brush to seal the edges.
- Next, use a fork to close the edges together.
- Use your pastry brush and brush a little bit of the egg yolk on the top of the pate´. This will allow for your patty to have that golden and flaky crust.
- Finally, these are ready to go into the oven.
- Place your patties on a baking sheet, with the baking spray, and cook these for 15 minutes or until golden brown.
